Chunky White Bean Soup

Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 2 medium size carrots, diced
  • 2 celery stalks, diced 2 bay leaves
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp tomato puree
  • 2 tins canned white beans, strained
  • 1 litre vegetable broth
  • Salt & pepper
  • 3 cups of spinach
  • ½ lemon, fresh squeezed

Garnish (optional):

  • Crispy vegan bacon
  • Fresh parsley, chopped
  • Chilli flakes
  • Bread, sliced

 

A hearty white bean soup loaded with vegetables and beans from Givaudan. Easy to prepare and perfect for a cold day.

Method

  1. In a large pot, heat the olive oil over medium-low heat.
  2. Sauté the garlic and onion for 3-4 minutes, then add the carrots and celery and sauté for another 5-7 minutes.
  3. Add the bay leaves, thyme and rosemary, sauté for a minute then add the tomato puree and stir until lightly browned.
  4. Add the white beans, followed by the vegetable broth, salt and pepper to your taste. Stir and let it simmer for about 10-15 minutes.
  5. Remove the bay leaves and add in the spinach, stir until it’s wilted.
  6. Remove the pot from the heat and squeeze the juice of a half lemon over.
  7. Serve hot with freshly chopped parsley, chilli flakes, crispy vegan bacon to add smoky flavour and a slice of bread. Enjoy!
