Fava Bean Cookies

Ingredients

  1. 100g Fava bean flour
  2. 150g Ground almonds
  3. 3tbsp Maple syrup (4tbsp if you like them sweeter)
  4. 4tbsp Coconut oil
  5. 1tsp Bicarbonate of soda
  6. 1tsp Vanilla extract
  7. 50g Raw dark chocolate (roughly chopped into small pieces)
  8. A pinch of sea salt

A yummy alternative cookie recipe!

Preparation

makes 12 small cookies – Oven 150c.

 

Method

  •  Put all of the ingredients, apart from the chocolate, into a food processor. Whizz up until the mixture starts to come together, then empty out into a bowl.
  • Add the roughly chopped chocolate into the crumbed mixture and bring together with your hands until it forms a ball.
  • Divide the cookie dough into twelve evenly sized balls and place onto a baking tray. Using the palm of your hand squash the cookie balls down to make a flat round cookie shape.
  • Bake in the oven for 10-15 minutes, depending on how hot your oven is.
