Quinoa Coconut and Coriander Salad

Vegan coconut carrot coriander quinoa

So I am quite a salad freak.

Love salads and when I say salad I don’t mean lettuce, tomatoes and cucumber…I mean protein packed deliciousness and plenty fresh ingredients on a plate!

NEVER be stingy with a salad.

  1. 1 cup Cooked Quinoa (cook quinoa in vegetable stock for more flavor)
  2. 1 grated carrot
  3. 1 stalk finely chopped celery
  4. 10 almonds chopped and roasted
  5. Shredded coconut
  6. Handful (1/3 cup) chopped coriander
  7. Vinaigrette:
  8. 60ml lemon juice
  9. 30ml water
  10. 60ml olive oil
  11. 2 tsp white vinegar
  12. 1 clove crushed garlic
  13. Oreganum, salt and pepper to taste.

  • Cook the quinoa.
  • Mix ingredients together to make up a salad!
