Red Cabbage, Walnut and Pear Salad with Date and Balsamic Sauce

Ingredients

  1. 30g raisins
  2. Half a red cabbage
  3. 4 sticks celery
  4. 4 spring onions, cut into shreds
  5. Small bunch coriander
  6. 200g walnuts kernels or 75g walnuts, shelled.
  7. 1 pearFor the dressing
  8. 6 dates, or 4 if using a large variety such as the Medjool
  9. 4 tbsp walnut oil
  10. 1 tbsp balsamic vinegar
  11. 1 tsp wholegrain mustard
  12. 1 tsp caraway seeds
