Single Serve Protein Oatmeal Cookie

A chewy soft freshly “baked” cookie with an added protein boost cooked up in under 2 minutes in the microwave!

  1. 1/2 cup (45g) rolled oats
  2. 1 tsp (5g) peanut flour or nut flour of choice
  3. 1 tbsp (15g) Peanut butter or nut butter of choice
  4. 1 square (10g) dark chocolate chopped
  5. Pinch of cinnamon (optional)
  6. Coconut oil for greasing your ramekin
  7. 1/4 cup (60g) ripe mashed banana; approximately half a small banana
  8. 1 tsp (5g) Pulsin rice protein (or other protein, optional)
  9. 1 tbsp (15ml) unsweetened almond milk or non-dairy milk of choice
  10. 1/4 tsp baking powder
  11. 1/4 tsp vanilla extract or vanilla powder (optional)

  • Mix together all ingredients in a bowl.
  • Grease a 4-5 inch ramekin with coconut oil.
  • Place mixture into the ramekin and spread evenly with the back of teaspoon packing it down.
  • Cook in the microwave on high for 1.5 – 2 minutes – less time for a softer cookie!
