Very Berry Muffins


Comforting and delicious!

  1. 320g all-purpose flour
  2. 1 tbsp baking powder
  3. 2 tsp bicarbonate of soda (baking soda in US)
  4. 1 pinch of salt
  5. 200 g plant-based yoghurt (free from sugars)
  6. 650g caster sugar (or 6 tbsp stevia)
  7. 200 ml Provamel Organic Soya Drink Unsweetened
  8. 6 tbsp groundnut oil
  9. 1 tbsp vanilla extract
  10. 150g of blueberries

Serves 13. Preheat the oven to 200°C. Very Berry Muffins are made using Provamel Organic Soya Drink Unsweetened and Natural plant-based alternative to yogurt free from sugars.

  • Mix all the dry ingredients.
  • Beat the wet ingredients and mix with the dry ones until you have a lumpy mass.
  • Add the blueberries.
  • Ladle in the muffin tins (+/- 10 pieces) and bake for 25 minutes.
