Bright Herb Vegan Cheese Sticks

Ingredients

1 package (14 ounces) extra-firm tofu

1 cup panko breadcrumbs

1 tablespoon Frontier Co-op® Sweet Basil Leaf

1 tablespoon Frontier Co-op® Parsley Flakes

1 teaspoon Frontier Co-op® Tarragon Leaf (or substitute dill for a milder twist)

Zest of 1 lemon

2 tablespoons Frontier Co-op® Nutritional Yeast Flakes

1 cup all-purpose flour, divided

1 tablespoon cornmeal

1 tablespoon Frontier Co-op® Cornstarch

1 teaspoon Frontier Co-op® Sea Salt

1 teaspoon Frontier Co-op® Garlic Powder

1/2 cup water

Method

  1. Cut tofu into eight even sticks.
  2. In a medium mixing bowl, combine panko breadcrumbs, basil, parsley, tarragon, lemon zest, and nutritional yeast.
  3. In a separate medium mixing bowl, add 1/2 cup flour, cornmeal, cornstarch, salt, and garlic powder. Mix to combine, then add 1/2 cup water and whisk to create a smooth batter.
  4. In a separate bowl, place remaining 1/2 cup flour.
  5. Wrap tofu sticks in a paper towel and press gently to remove excess moisture.
  6. Dip tofu sticks one at a time in flour, then coat in batter, then roll in breadcrumb mixture.
  7. Heat a medium cast-iron skillet on medium-high heat. Add oil and allow it to heat until a breadcrumb dropped into the oil sizzles.
  8. Fry vegan sticks a few at a time. Cook each side until golden brown (about 1 minute) before turning.
  9. Optional: Sprinkle with a touch of extra lemon zest before serving for added brightness.
