COCONUT MILK KADI

Ingredients

½ cup toor dal, pressure cooked
2 cups thick and fresh coconut milk
1 cup spinach, chopped
Spices: (All roasted and ground to fine paste)
1 tsp coriander seeds
1 tsp ginger, chopped finely
½ tsp black pepper powder
2 amla
Seasoning:
½ tsp urad dal
½ tsp cumin seeds
½ tsp mustard seeds
2 whole dry red chilies

Who said vegans can’t enjoy kadi? Try this coconut milk version with rice and your favourite vegetable for a complete meal.

Method

  • Heat the pan and add seasoning of urad dal, cumin seeds, mustard seeds and red chilies. Roast for 30 seconds.
  • Add spinach to the seasoning and spices paste and cook for a few minutes.
  • Lastly add the cooked toor dal and coconut milk and mix well. Cook for five minutes.
  • Serve with rice.
