Ingredients

1 cup red rice puttu flour
1 tbsp cooking oil
2 cups mixed vegetables,
diced (onions, tomatoes,
capsicum, potato, carrot,
beans, peas)
Spices:
1 tsp urad dal
1 tsp mustard seeds
1 tsp coriander powder
1 tsp ginger garlic paste
4 curry leaves
1 tsp cumin powder
1 tsp garam masala
2 bay leaves
1 tsp chili powder
½ tsp turmeric powder
3 green chilies, sliced

Preparation

PUTTU MIX:
Sprinkle water and salt to the flour and mix well. Remove lumps and make the flour moist. Keep aside

Method

  • Heat oil in a pan. Add the seasoning of urad dal, mustard seeds, curry leaves, green chilies and all the other spices. Toss for 30 seconds and add onions.
  • When they turn brown, add other vegetables, ½ cup water and salt. Cover and cook on medium heat.
  • Keep the consistency thick. Adjust spices and salt content to be sufficient even after mixing puttu flour.
  • Once the vegetables are cooked well, allow it to cool down.
  • Mix this with the moist puttu flour and keep the whole mixture for steaming.
  • It takes 10-12 minutes for the puttu to be ready. Serve the puttu biryani warm with vegan raita
