LEMON RICE IDIYAPPAM & COCONUT RICE IDIYAPPAM

Ingredients

3 cups steamed idiyappam
¼ cup lemon juice
½ cup fresh coconut
4-5 tsp peanuts
3 tsp channa dal
2 tsp urad dal
4 green chilies
Pinch of turmeric powder
Salt, to taste
5-6 curry leaves
Bunch of fresh coriander
leaves
2 tbsp cooking oil
¼ tsp mustard seeds

No more boring dinner. Try this duo of flavourful recipes and make dinners interesting again.

Method

1. Heat oil in a pan and add the urad dal, channa dal,
peanuts, mustard seeds, green chilies, turmeric powder,
curry leaves and salt and cook for half a minute.
2. Scramble the idiyappam and add to the pan.
3. Mix well and add lemon juice.
4. Turn off the heat and garnish with fresh coriander
leaves.
5. Repeat the same process without turmeric powder
and lemon juice. Replace it with fresh coconut. That
makes coconut rice idiyappam.
6. Garnish with coriander leaves and serve with any
vegetable or stir-fried black-eyed dal as shown
in the image.
