LEMON RICE IDIYAPPAM & COCONUT RICE IDIYAPPAM

Ingredients

3 cups steamed idiyappam
¼ cup lemon juice
½ cup fresh coconut
4-5 tsp peanuts
3 tsp channa dal
2 tsp urad dal
4 green chilies
Pinch of turmeric powder
Salt, to taste
5-6 curry leaves
Bunch of fresh coriander
leaves
2 tbsp cooking oil
¼ tsp mustard seeds

No more boring dinner. Try this duo of flavourful recipes and make dinners interesting again.

Method

  • Heat oil in a pan and add the urad dal, channa dal, peanuts, mustard seeds, green chilies, turmeric powder, curry leaves and salt and cook for half a minute.
  • Scramble the idiyappam and add to the pan.
  • Mix well and add lemon juice.
  • Turn off the heat and garnish with fresh coriander leaves.
  • Repeat the same process without turmeric powder and lemon juice. Replace it with fresh coconut. That makes coconut rice idiyappam.
  • Garnish with coriander leaves and serve with any vegetable or stir-fried black-eyed dal as shown in the image.
