Masala Oats Upma

2 cups rolled or steel-cut oats
2 cups mixed vegetables, chopped (a mix of onions, capsicum, peas, potato, tomato, carrot, beans)
½ tsp coriander powder
½ tsp ginger-garlic paste
½ tsp cumin powder
½ tsp mustard seeds
5 curry leaves
2 green chilies, sliced
3 cups water


1. Heat a pan and add a little cooking oil (optional), add cumin, mustard seeds, curry leaves and green chilies. Fry for half a minute.
2. Add onions and tomatoes and cook well. If you are not using oil, then add salt for the onions to release water.
3. Add the other vegetables and oats and cook for two minutes.
4. Add water, coriander powder and ginger-garlic paste. Cook on medium heat for three to five minutes.
5. Garnish with fresh coriander leaves.
Tip: Choose steel-cut or rolled oats as they are less processed.
