Masala Oats Upma

Ingredients

2 cups rolled or steel-cut oats
2 cups mixed vegetables, chopped (a mix of onions, capsicum, peas, potato, tomato, carrot, beans)
½ tsp coriander powder
½ tsp ginger-garlic paste
½ tsp cumin powder
½ tsp mustard seeds
5 curry leaves
2 green chilies, sliced
3 cups water

Method

  • Heat a pan and add a little cooking oil (optional), add cumin, mustard seeds, curry leaves and green chilies. Fry for half a minute.
  • Add onions and tomatoes and cook well. If you are not using oil, then add salt for the onions to release water.
  • Add the other vegetables and oats and cook for two minutes.
  • Add water, coriander powder and ginger-garlic paste. Cook on medium heat for three to five minutes.
  • Garnish with fresh coriander leaves.
  • Tip: Choose steel-cut or rolled oats as they are less processed.
