PATRA (GUJARATI SNACK)

Try this traditional snack from Gujarat which is naturally gluten free and vegan!

Ingredients

5 taro leaves
2 heaped tbsp any
millet flour
3 heaped tbsp besan
1 tsp tamarind paste
½ tsp jaggery powder
½ tsp chili powder
Pinch of hing
Himalayan salt
Pinch of turmeric powder
½ tsp fennel seeds
Optional: Prepare a
tempering with oil, urad
dal, mustard, sesame
seeds and finely chopped
curry leaves.

Method

1. Take the flours and spices in a bowl, add ½ cup water and
mix well. Make a semi-solid consistency batter.
2. Wash the taro leaves and remove the stem.
3. Place a leaf flat and apply the batter over it in a thin and
even layer.
4. Spread another leaf over it and repeat spreading the batter
on the leaf.
5. Continue this method on the rest of the leaves, placing them
one on top of the other.
6. Fold the corners inward and roll the whole set of leaves into a
firm roll.
7. Steam for 15 minutes.
8. Remove from steamer and slice them into ½ inch size rolls
Plating: Place the sliced patra on a serving plate and sprinkle
the seasoning and fresh coconut over the slices. They are ready
to consume
