1 Medium Sized Sweet Potato
2 Slightly Over-Ripe Bananas
3 Cups Non-Dairy Milk
3 Tablespoons Chia Seeds
1. Pressure cook the sweet potato for up to three whistles. Cool and peel. Alternatively you can steam it until tender.
2. Blend the cooked sweet potato, bananas and non-dairy milk until thick and creamy.
3. Stir in the chia seeds.
4. Refrigerate for at least 20-30 minutes before serving.
