Mango and Chia Seed Pudding

  1. 2 tbsp chia seeds
  2. 2 tsp peanut butter
  3. 1 mango sliced and the juice
  4. 150ml almond (or other dairy alternative) milk

This could quite possibly be one of the simplest, guilt-free, good-for-you and tasty desserts you can make. Chia seeds are incredibly versatile and are thought to have great health benefits. This is one of my favourite pudding flavours, and a great way to take advantage of the delicious mangoes when they are in season.


This recipe is for two servings

  1. Put all of the ingredients in a bowl and stir until well-combined
  2. Divide the mixture into two glasses
  3. Cover with cling film and place in the fridge overnight

Now go to bed and dream of the delicious dessert you’ll be eating tomorrow!
