Vegan recipes to keep you warm – and full – when it’s cold outside.
There’s nothing like a nice hot breakfast to keep you warm on a frosty day. Here are some quick and easy recipes for those busy weekday mornings, with a few make-ahead options, and of course some indulgent brunch ideas, perfect for a cosy weekend at home.
Porridge
This traditional breakfast is a classic for a reason! Cheap, quick to make and packed with fibre, a hearty bowl of porridge will keep you full all morning and warm you up on a cold day. You can make your bowl indulgent (butter and golden syrup, anyone?) or healthy with nut butter (protein and healthy fat), fresh fruit (vitamins and more fibre) and flax, hemp or chia seeds (omega-3).
If you’re pressed for time or you eat breakfast at your desk, you can even make it in the microwave: just add oats and milk or water to a microwave-safe bowl and heat in 30 second increments, stirring each time.
Breakfast Burritos
If you love a savoury breakfast, you can’t go wrong with a protein-packed breakfast burrito. These are easy to make ahead and freeze: just reheat in the microwave or oven when you’re ready to eat. Scrambled tofu, beans, roasted veggies and vegan cheese are wrapped up in a travel-friendly flour tortilla, making a perfect on-the-go breakfast that’ll even keep your hands warm.
We love this recipe from Sweet Simple Vegan as a starting point: experiment with your favourite fillings or use up what you’ve got to hand in the fridge.
Apple Pie Baked Oatmeal
This requires a little more time than our first two recipes, but it’s easy: just mix together the ingredients and bake. You can increase the protein with a spoonful or two of nut butter, or add your favourite dried fruit or nuts. This makes a great winter breakfast for a lazy Sunday and it’ll make your house smell amazing – make some coffee, pop this in the oven and enjoy a long Sunday brunch.
Fluffy Vegan Pancakes
We couldn’t give you a list of vegan breakfast ideas without including pancakes, could we? Fat, fluffy pancakes make a perfect weekend breakfast, but they keep well – heat for 20 seconds in the microwave and you’ve got yourself a quick-and-tasty treat for a wintry Monday morning.
This recipe from Veganosity makes the best vegan pancakes: try them with the spiced apple compote in the recipe or experiment with your own toppings (we love strawberries and vegan yoghurt or maple syrup and vegan bacon).
Vegan French Toast (Eggy Bread)
Thought French toast was one of those breakfasts you just couldn’t veganise? Think again! It’s actually really easy, and you can make it without any fancy ingredients.
Connoiseurus Veg has a great recipe here that could be easily tweaked to make it savoury if you prefer it that way.
