Bettina Campolucci-Bordi is known for running Bettina’s Kitchen, a business that incorporates her blog, recipes, retreats, and workshops.
With a background in the travel industry, she started by running retreats where she did all of the cooking. The food was plant-based and gluten-free. Having been diagnosed with Polycystic Ovary Syndrome (PCOS), the food cooked for the retreats began to find their way into Bettina’s home life.
Of her continuing journey, she states:
Over the years, my knowledge about and passion for plant-based diets has continued to grow and I am constantly on the hunt for delicious solutions to everything. Many of my clients have specific health issues and or new-found intolerances.
Bettina’s book, Happy Food, encourages plant-based cooking that can easily be incorporated into modern busy lives. With a background in the health travel industry, Bettina promotes food that is meat free, refined sugar free and gluten free. Most importantly, she thinks food should make one happy. She describes the recipes in the book as:
It’s easy, accessible, vegan food that is also comforting…. I’ve made sure to use ingredients that are basic and can be found in most supermarkets and countries nowadays.
In 2018, Bettina recorded a series of plant-based recipe videos for Veganuary to promote their 2019 campaign. Her delicious meals included Peanut Butter Bircher (which you can watch below), One Pot Curry in a Hurry and Noodles with Satay as part of a leftover challenge!
