What are the vegan options at Marugame Udon?
Making Udon Noodles the Marugame way is a long, time-consuming craft. Made daily from just three ingredients, wheat flour, salt and water in an open kitchen, they use skill and intuition, harvesting a deep inner knowledge of the noodle. This is just one of their everyday rituals so that you can enjoy udon, an everyday meal loved in Japan.
Their food philosophy is inspired by ancient Wabi Sabi principles, focusing on ‘naturalness without pretence’. This means the noodles use the simplest of traceable ingredients.
