At the age of 3 I started making the connection about what meat really was and made the decision to become a vegetarian. It was not until I was 29 that I made the same sort of connection with dairy and eggs and realised that vegan was the way forward.
As a home-educating mum of two vegan boys cooking is something that I simply can not get out of doing. I am lucky to have a vegan husband who is also happy to cook on a evening but breakfast and lunch is exclusively down to me.
Sometimes I enjoy cooking and sometimes I find it stressful but I can not deny that I love eating the end product!
There are two things you should know about my cooking style. Firstly, I rarely make a plan and end up looking in my fridge wondering what on earth I can make with what I have in. Secondly my youngest son makes his very best attempt to prevent me from cooking anything at all!
These American pancakes are fluffy, delicious and versatile. I like cinnamon and raisin but you can add whatever flavourings you like.
To make them taste like a sweet treat I like to serve these with fruit dips, and mangoes always blend perfectly.
