New York City based pastry chef, culinary instructor and author Fran Costigan is internationally renowned as the authority on vegan desserts. I grew up in Czech Republic where eating meat is almost part of the culture. You start your day with sausages, move on to a midday feast of traditional Czech goulash ( stew), and close the day off with a dinner consisting on mashed potatoes and pork steak in breadcrumbs. I have been vegetarian for nearly 20 years and vegan for the last year. I couldn’t have made a better decision!
My decision to go vegan was not only for the animals and the environment, but also to look after myself and my body. There are so many yummy vegan foods out there… which is why I started my blog. There is more to being vegan than eating salads and drinking smoothies. Plant based eating is amazing and has many fantastic benefits. Cutting out animal protein and dairy reduced the amount of bad fat I ate, so naturally I lost a lot of weight! I will never go back, only forward.

I went vegan in 2008 and within a fairly short space of time, I began following a plant-based lifestyle. It has been fabulous! My goal is to help others achieve the same through my site and individual coaching.
I’m not sure what happened to trigger the change, but when I was about 11 years old, I decided that I didn’t agree with killing animals for food, so I stopped. I was a vegetarian from the age of 11. I thought that I was eating in a way which involved the least amount of violence possible.
I watched a video about dairy production and I was devastated. Suddenly I realised that there was a whole world of death and cruelty that I had no idea about and I wasn’t happy to be part of it, so I pretty much made the shift to a non-dairy diet that day.
Plant-based living means I eat vegan and in addition to this, I wear vegan clothes and shoes, use vegan toiletries and make-up and I buy vegan jewellery.
Why? As I researched further, I realised that bees are harmed when honey is gathered; silk worms are killed during the production of silk and sourcing wool involves suffering too.
How do I feel since I made the shift to a vegan lifestyle? I feel great! My conscience feels lighter, I feel healthier (which was an added unplanned bonus) and I feel like I have less to think about.

Jane went vegan in 2001 after a „bit of an epiphany after snorkelling“. She returned to a lunch table filled with enormous dead fish and shellfish and went veggie immediately. Within 2 months, after lots of reading, she was fully vegan.
Through her research she discovered the work of Viva! and thought they were so amazing that she joined and then became a volunteer. In 2004 she started working for them, starting off as Juliet’Gellatley’s PA.
In 2014 Jane decided it was time to delete the Chinese takeaway number from her speed dial, and head into the kitchen. Since then, some great successes and some shocking disasters have taken place in her oven. But as any many cooks will agree, this is all part of the process.
