Rustic Sundried Tomato Bread
This rustic and loosely shaped bread has a lovely golden crust and a rather nice crumb interior, it is so incredibly quick and simple, and makes the perfect off-the-cuff lunch teamed with some creamy hummus and cherry tomatoes. Feel free to play around with the added flavours; the addition of olives or thyme and rosemary would all work well, perhaps some pine nuts too. It’s a great example of a quick bread and a lovely thing to eat and enjoy whether for lunch or supper.

Carrot Spiced Rice with Creamy Almond ‘Yogurt’
This dish is a beauty and makes a glorious vegan supper; the almond ‘yogurt’ is a lovely creamy accompaniment with a nice sharp, lemon back note to balance out the spiced carrot. This is a spring time kind of dish, still warming enough to give you energy but full of the bright, zesty notes of sunshine and warmth. Lovely.

Caramelised Onion Dip with Hot Foccacia
Perfect with asparagus and wild garlic, this foccacia has the aerated texture required with crisp, crunchy edge, making it pretty perfect for dipping into stuff. This Caramelised Onion Dip is sweet, sharp, citrusy, dippy; it makes for a lovely and relaxing, light supper, the kind you want when summer is on its way.

Roast Potatoes with Peppers, Garlic and Creamy Tahini Sauce
Both vibrant and comforting; this is the simplest and most glorious of side dishes. Like all good accompaniments it marries well with almost anything: salads, dips and wraps all make wonderful bedfellows with these crisp and luscious, bite-sized roast potatoes, sweet and juicy peppers and mellow, creamy tahini sauce.

Gazpacho
Gazpacho is such a summertime dish. Sweet and slightly sour (that will be the tomatoes, cider vinegar, citrus juices and softened dates), mellow spicing (chilli, cumin, coriander, parsley) and just an overall delicious mix of creamy and crunch. This is one of those dishes that you just feel better for eating.

Curried Chickpea Burgers
These Curried Chickpea burgers are packed full of nutrient rich quinoa and chopped chickpeas, made creamy by softened carrots and onion and richly flavoured with curry paste, you can cook them on the stove or on the barbeque. They make a good base for a summery supper; you can even wrap them in iceberg lettuce leaves to form a burger in a bun.

Carrot and Apple Cake with Lemon Icing
This cake is the winner: grated apple and carrots, caramel syrup and brown sugar and a delicate ripple of mixed spice make it deliciously aromatic and moist – the lemon icing on is just the proverbial cherry on top.

Baked Apple Charlotte
This is a wonderful pudding to warm you inside and out. You can have it two ways: bake in the oven and then serve warm with a generous pouring of vegan custard. Or, as here, bake into a tray bake, leave to cool and then drizzle with icing for a tempting and indulgent afternoon treat. Either way is equally delicious.

Panzanella is a Tuscan classic, made up of toasted stale bread made into chunky croutons, ripe, sweet tomatoes, fragrant basil, the bite of onion and a generous pouring of excellent olive oil – what’s not to like!

Gooey Chocolate Brownies
A vegan classic. This one uses Aduki beans (also known as adzuki beans), which are traditionally used in Japanese cookery to make a sweet and creamy paste called anko. Here, their creamy density is used to make the base of these delicious and gooey, dark chocolate brownies. Incredibly rich and chocolaty, they make a wonderful warm pudding - serve with vegan ice cream!

Sweet Potato Bread
Gluten free, soy free, nut free, yeast free. This quick, no-rise bread is so incredibly simple to make and relies on only a handful of ingredients to pull it together. Cooked sweet potato binds the dough; adding moisture, colour and flavour. The result is a crisp crust with a dense and slightly sweet soft interior.

Strawberry and Cream Cupcakes
Gluten free, soy free, nut free, yeast free. These little sweet treats are actually incredibly simple to make. I love the idea of using fruit to help bind and add an extra layer of flavour, and these cupcakes are very fruity indeed!

Gluten free, soy free, yeast free. These little burgers make such a great, summery dish. If it’s truly hot outside then these are easily transferred to the barbeque to cook.

Roasted Vegetable Socca
Gluten free, soy free, nut free, yeast free. Socca, or Farinata as it is sometimes known, is a flatbread made simply from a combination of gram flour, water and oil. I have on occasion found the inclusion of a little rosemary or smoked paprika but otherwise this simple and delicious bread is a quick and easy addition to any meal.

Gluten free, soy free, nut free, yeast free. What could be more sumptuous on a wintry day than to slowly cook this fragrant and rich tagine, packed full of vegetables and sweetened with spice and agave syrup.

Lemon Tart
Gluten free, soy free, nut free, yeast free. Bright, zesty and delicious, this lemon tart is such a lovely thing to serve in the warmer months. I love the intense citrus flavours that come from the pastry flecked with zest and the rich, unctuous filling.

Dhal with Caraway Aubergine
Gluten free, soy free, nut free, yeast free. Rich, thick and creamy this mellow spiced dhal is a delicious accompaniment to curries. Serve with Onion Bhajis a bowl of basmati rice, a few poppadoms and some freshly sliced tomatoes. The caraway roasted aubergine add extra bite and a fragrant finish.
