This vegan apple berry cooler is a real summer delight!
Prep time: 15 minutes
Serves 2
1 litre (4 cups) organic apple juice or juice of your choice
Small pinch of sea salt
Agar-agar flakes (1 level tablespoon of flakes per cup of liquid)
Some fresh berries, such as raspberries and strawberries (if not in season, use frozen)
This vegan apple berry cooler is a real summer delight!
Prep time: 15 minutes
Serves 2
Pour the juice into a small saucepan and add the salt. Sprinkle the agar-agar flakes on top and heat without stirring, then simmer for 3-5 minutes, stirring occasionally until the flakes dissolve.
Place the fruit in whatever moulds or bowls you have chosen. Pour over the hot liquid, allow to cool and then place in the refrigerator to set.
Note: soft fruits such as berries, cherries, peaches or melons do not need to be cooked with agar- agar. However, firmer fruits such as apples or pears need to be peeled, chopped and cooked in the agar- agar and juice mixture to soften them.
