Avocado and basil pesto bruschetta

  1. Sourdough bread, sliced
  2. 2 tbsp extra virgin olive oil
  3. 1 avocado
  4. Salt + pepper
  5. 1 small red chilli, seeded + chopped
  6. Handful fresh coriander
  7. Tideford Organics Basil Pesto (or another vegan pesto)


Brush slices of the bread with a little extra virgin olive oil and toast lightly.

In a bowl, mash up the avocado with a little salt + pepper and mix in some of the chilli.

Spread the avocado mixture onto the toasted bread and top with a generous spoonful of the pesto.

Garnish with the rest of the chilli and the coriander leaves.
