Well, these vegan cheese straws are a blast from the past…savoury snacks that really hit the spot. Cheesy, flaky, and as much zing as you like from the mustard, black pepper or – if you are really pushing the boat out – a dash of cayenne, too.

Ingredients

250g plain flour
Pinch salt
120g butter
125g vegan cheese
¼ tsp black pepper
½ tsp mustard powder
2 tbsp cornflour, stirred into 7 tbsp water

Well, these vegan cheese straws are a blast from the past…savoury snacks that really hit the spot. Cheesy, flaky, and as much zing as you like from the mustard, black pepper or – if you are really pushing the boat out – a dash of cayenne, too.

Method

1. Sift the flour into a bowl. Add the salt and then rub in the vegan butter until the texture resembles fine breadcrumbs and there are no lumps of butter left.
2. Stir in the cheese, pepper, mustard powder, and cornflour in water. Add 4–5 tablespoons of cold water and mix to form a firm dough.
3. Pop into a food bag and let it chill in the fridge for 30 minutes.
4. Heat the oven to 190C. Line a baking sheet with baking paper.
5. Once the dough has chilled, roll it out to ¼ cm thickness, and cut into your straws.
6. Transfer them onto the lined sheet and bake for 15 minutes until crisp.
7. Leave them to cool on the tray before eating.
