Ingredients

• 2x 200g pack of Better Nature Organic Tempeh, cut into strips
• 2-3 tbsp soy sauce
• 2 tbsp olive oil
• 2 cups broccoli, chopped*
• 1/2 yellow bell pepper, sliced*
• 1/2 red bell pepper, sliced*
• 1/2 cup carrots, sliced thinly*
• Salt and pepper to taste

* You can use other veggies too

Stir Fry Sauce:
• 1 tbsp rice of tapioca flour (optional, it’s used to thicken the sauce)
• 2 tbsp cold water
• 1/4 cup vegetable broth
• 3 tbsp soy sauce (adjust according to your taste)
• 2 tbsp maple syrup
• 1 tbsp toasted sesame oil
• 1/2 tsp chilli flakes
• 2 tsp ginger, minced
• 2 garlic cloves, minced

Method

1. Cut the Better Nature Organic Tempeh block into strips, place them into a bowl and add the soy sauce. Gently mix the tempeh strips so they’re all well coated. Let them marinate.
2. Place all the ingredients for the stir fry sauce into a bowl and whisk well to combine the ingredients then set aside.
3. Take a pan and 1 tbsp olive oil and cook the tempeh strips on medium heat, occasionally stirring until golden brown. Remove them from the pan.
4. Use the same pan and add the remaining olive oil (1 tbsp), followed by the cut broccoli, bell pepper, carrots and cook, stirring occasionally until almost tender (they still need to have a bite).
5. Add the tempeh strips back to the pan and stir to combine.
6. Take the stir fry sauce that was set aside, give it another whisk before pouring it over the tempeh and vegetables in the pan. Gently stir (to combine) and fry for another 1-2 minutes, until the sauce thickens.
7. Serve the tempeh stir-fry with rice or noodles. Optional: sprinkle some chilli flakes or sesame seeds on top before serving. Enjoy!
