Serves 2.
3 cups cooked brown rice
1 cucumber
2 carrots
1/4 cup sesame seeds
1 nori sheets, roughly chopped
1 avocado, sliced into pieces
½ cup of coriander, finely diced
Spring onions to garnish
Dressing for rice:
2 tbsp sesame seed oil
2 tbsp tamari
1 tbsp ginger juice
1 tsp rice vinegar
1 tsp maple syrup
