Ingredients

  • 230g plain flour
  • 150g light brown sugar
  • 3 large over-ripe bananas
  • 100g Peanut Hottie peanut butter powder
  • 15g cocoa powder
  • 60ml oat milk
  • 40ml melted coconut oil
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder
  • 3 tsp almond extract

Method

  1. Heat your oven to about 180c.
  2. Mash your banana in a bowl and combine with the oat milk, coconut oil, almond extract and soft brown sugar.
  3. In a separate bowl mix your Peanut Hottie peanut butter powder with water to make a thick peanut butter then add the peanut butter mixture to the bowl of combined ingredients.
  4. Add the plain flour, bicarbonate of soda and baking powder to the banana mixture and mix until well combined.
  5. Split the mixture into two bowls, add cocoa powder to one bowl and mix together.
  6. Line your loaf tin with baking paper, add a layer of each mixture, alternating until the mixture has been used up.
  7. Place your loaf tin in the oven for about 50 minutes. Keep an eye on it, if your knife or cake tester comes out almost clean take it out of the oven and leave on a baking rack to cool down.
  8. Once cooled slice and enjoy. (If you’re a huge peanut butter fan you can top a slice with peanut Hottie for an extra peanut hit.)
