Ingredients

  1. 250g Merchant Gourmet Red & White Quinoa (https://www.merchantgourmet.com/products/product/quinoa-red-white/)
  2. 200ml orange juice (from a carton is fine)
  3. 200ml water
  4. 1 tbsp grated ginger
  5. 1 tbsp chia seeds (optional)
  6. 200ml almond milk
  7. For The Topping
  8. Zest of half an orange removed with a zester
  9. 80g mixed nuts and dried fruit (I used dried cranberries, chopped dried apricots,
  10. almonds and pistachios)
  11. 1 tsp maple syrup (optional)

Preparation

Bring the orange juice and water to the boil. Add the quinoa and ginger. Cover the pan and simmer gently for 15 minutes, checking and stirring occasionally so that the quinoa doesn’t stick to the bottom.

Add the almond milk. Bring back to the boil, then take the pan off the heat. Leave to sit for 5 minutes.

Stir in the maple syrup (if using). Spoon into bowls, serve with the topping and more almond milk.
