Red Cabbage Chickpea Boats

Vegan chickpea boats

Make 1 large or 2 small servings

Ingredients

  1. 150 g shiitake mushrooms
  2. 1 shallot, sliced
  3. ½ red pepper, diced
  4. ½ orange pepper, diced
  5. 1 tablespoon olive oil
  6. 170 g Cooked Chickpeas
  7. 1 teaspoon ground turmeric
  8. 1 teaspoon paprika
  9. ½ teaspoon garlic powder
  10. ¼ teaspoon sea salt
  11. 4 small or 2 large red cabbage leaves
  12. 100 g rocket

Preparation

  1. Cook the mushrooms, shallot and peppers in the olive oil in a pan set over medium heat for 5 minutes.
  2. Add the chickpeas, turmeric, paprika, garlic powder and salt and cook for 3 minutes more.
  3. Fill the cabbage leaves with the chickpea mixture and serve over a bed of rocket.
