Treat your best self with these simply sumptuous Sweet Potato Slices from Applewood. Whether you’re making them as a snack, dinner or canapés at a fancy dinner party darling, they’ll go down a storm.
Method
Wash and scrub sweet potatoes.
Cut into thick slices.
Score each piece of potato.
Mix olive oil and herbs, and spread on each slice.
Bake in a preheated 180°c oven for 20 mins.
Add a dollop of vegan pesto and a generous helping of Applewood Vegan Grated to each.
Pop back into the oven until bubbling and crisp on top.
