Vegan walnut paté

This recipe happened by accident actually. I was experimenting with walnuts to create a walnut cheese. It tasted very good but the colour was nothing like cheese. Then I realised this tasted much more like pâté, especially if I change and add a few ingredients as well. And it worked amazingly well. This is one of my best recipes EVER, you should definitely try it – even if you don’t like pâté, you will love this vegan walnut pâté.

If you are holding a party this is one amazing quick canapé you can make. It takes less than 15 minutes to prepare and then some time in the fridge to chill. You can easily make it a day in advance as well. Then serve it on sliced baguette or blinis. You can also add some cranberry jam or sliced grapes on top. The savoury taste of this vegan pâté goes so well with something sweet. Your guests will love it. Or just have it all by yourself instead of hummus.

Ingredients

  1. 75g walnuts
  2. 150ml water
  3. 2 tbsp corn starch
  4. 2 1/2 tbsp nutritional yeast
  5. 2 tbsp lemon juice
  6. 1 tbsp olive oil
  7. 2 1/2 tbsp soy sauce (unsweetened)
  8. 1/2 tsp miso paste
  9. 1/3 tsp garlic powder
  10. 1/3 tsp onion powder
  11. 1/3 tsp smoked paprika
  12. Pepper to taste

Preparation

This is really super easy!
Add all ingredients to a food processor and blend for a couple of minutes until you get a very smooth paste.

Then pour the mix into a pan on high to medium heat and heat up. Make sure you stir constantly so it doesn’t burn. After a while the mixture will change consistency and turn into a paste. Cook for a couple of minutes longer and then transfer it to a flat dish. Pat down and even out with a spoon so you get a smooth surface.

Let set in the fridge for 1.5 to 2 hours.
Serve on toasted baguette.
