The day was established in 1994 by the UK Vegan Society, partly because November 1st coincides with Halloween and the Day of the Dead. That’s right: World Vegan Day is the day to remember all the animal lives you’re saving by eating plant-based!

But it goes deeper than that. Did you know that classic plant-based Halloween foods like pumpkins and candy apples have roots in religious traditions of abstaining from meat? True story.

That’s why we’re focusing on pumpkin recipes today. Pumpkins are the perfect seasonal food to help celebrate both World Vegan Day and Halloween

Pumpkins don’t get enough respect. We carve them into jack-o’ lanterns for Halloween and maybe turn them into pumpkin pie for Thanksgiving, but there’s so much more that pumpkins have to offer.

For instance, they’re loaded with beta-carotene, a powerful antioxidant that studies have shown to help prevent age-related diseases like heart disease, cancer, and macular degeneration. Secondly, sweet and smooth pumpkins taste great!

Here are some of Wicked Kitchen’s most pumpkin-tastic recipes for World Vegan Day.

PUMPKIN PESTO PASTA

Here’s a quick way to get more pumpkin in your diet. It’s an easy dinner that starts with a jar of Wicked KitchenTM Orange Pumpkin Pesto Sauce.

This sauce is packed with pumpkin puree, sweet yellow bell peppers, cashews, and a touch of curry for incredible flavour. Just saute some onions and cherry tomatoes, then toss with boiled pasta, a jar of pumpkin pesto, and a little arugula.

Boom! A healthy, satisfying meal gets to your table in no time.

FALL SQUASH WITH MAZIN’ MANGO SAUCE

Here’s another simple way to get all the health and flavour benefits of pumpkins at this time of year.

It’s a puree of pumpkin or other fall squash, apple cider, coconut milk, and Wicked KitchenTM Mazin’ Mango Sauce. This jarred sauce adds a touch of tropical flavour with mango puree, citrus juices, ginger and turmeric.

It takes a humble squash puree to a whole ‘nother level of flavour! A garnish of juicy red pomegranate seeds also makes the dish special enough to serve guests.

Just heat it up and add cooked rice noodles, seared tofu, and your favourite vegetables for a complete, flavour-packed, belly-filling autumn meal. Wicked Easy!
