Grilled Avocado with Black Bean Salsa
Black Bean Salsa:
- Combine all the ingredients in a bowl and allow to marinate in the refrigerator for 2-3 hours to bring out the flavors.
- Generously apply extra virgin olive oil over the avocados with a basting brush.
- Place the avocados “meat” side down on a hot BBQ grill and cook for 8-10 minutes until the skin gets hot and turns bright green.
- Fill each half with salsa.
