Makes 2 portions
- Cut and core the apple. You don’t need to peel it.
- Put the apple and the blueberries in the chopper attachment of a hand blender or food processor.
- Blend till smooth-ish. Put into serving bowls.
- Put all of the nuts into the blender and blitz till they are crumbs.
- Add the dates and blitz again until the dates are very small pieces.
- Add the quinoa flakes and blitz for a few seconds.
- Pour this mixture on top of the fruit.
