6 tbsp Peanut Hottie Original peanut butter powder
2 tbsp rapeseed oil
1 tbsp dark soy sauce
½ green chilli
80ml white wine vinegar
1 tbsp caster sugar
200g long grain rice
A high-protein tofu bowl straight off the hob from our friends at Peanut Hottie. It’s vibrant, easy and full of the good stuff!
Method
Rinse the rice and add to a medium-sized saucepan with water and bring to the boil, then cover and simmer.
Peel the carrots, then cut the carrots and cucumber into ribbons, mix the white wine vinegar, caster sugar and 80ml of water together, then add your vegetable ribbons to the mix.
Mix the Peanut Hottie Original peanut butter powder with water to create a fairly thick peanut butter mixture. Add the rapeseed oil and dark soy sauce to the peanut butter and mix until well combined.
Split the peanut butter mixture into two bowls. Dice your tofu and add to one bowl of peanut butter mixture to marinate for 15 – 20 minutes.
Cook your marinated tofu on the hob in a little oil, turning until crispy.
Add the cooked rice to a serving bowl, and decorate with the vegetable ribbons and tofu.
Drizzle with some peanut butter mixture and fresh green chillies.
