Traditionally a rosti uses grated potatoes but when my son asked me to make a fruit rosti I thought I would give it a try. And I have to say, it’s pretty good! Try adding nutmeg, chilli flakes or your other preferred seasonings to really bring it to life.

NOTE: Now in theory the rostis should be done now. However if they are not binding well (and they don’t always) then put them in a preheated oven for 5 minutes to finish them off.
