Cheatin’ Chik’n, Cashew and Mushroom Korma

Vegan korma

A compassionate take on the creamy classic, but better!


  1. 1 white onion, diced
  2. 8 chestnut mushrooms, chopped
  3. 1 large handful of cashews
  4. 1 ½ packs vegan chicken style pieces (Quorn)
  5. ½ sweet red pepper
  6. Handful of sliced spinach
  7. 1 jar vegan korma curry paste
  8. ½ carton non-dairy single cream
  9. Water
  10. Pinch of chilli (optional)
  11. Drizzle of agave syrup (optional)
  12. Sprinkle of desiccated coconut (optional)
  13. Salt & Pepper to taste (optional)


Serves 4.


• Lightly fry onion, mushrooms, pepper, cashews and chicken style pieces for 5 minutes or until golden.

• Add seasonings and curry paste.

• Add single cream and water.

• Add spinach.

• Simmer for a further 10 – 15 minutes, adding water if/as required.

• Serve with rice and pita.
