For the Burgers:
• 4 TiNDLE Burgers or similar
• 4 burger buns
• 2 baby gem lettuce, shredded
• 1 tbsp vegetable oil
For the Coronation Sauce:
• 30g shallots, finely diced
• 1 tbsp vegan butter
• 1/2 tbsp medium curry powder
• 1 tsp tomato purée
• 1 tbsp mango chutney
• 1/2 tbsp apricot jam
• 80g vegan mayonnaise
• 40g Greek-style vegan yoghurt
• 2 tsp fresh lemon juice
• Salt and pepper, to taste

1. For the coronation sauce, start by melting the butter in a frying pan over medium heat.
2. Add the diced shallots and cook for 4-5 minutes until soft, stirring often.
3. Add the curry powder and tomato purée and cook for 2-3 minutes.
4. Pour the mixture into a mixing bowl and set aside to cool.
5. Add the apricot jam, mango chutney, lemon juice, mayonnaise and yoghurt to the mixture. Stir to incorporate and season to taste with salt and pepper.
6. Cook the TiNDLE Burgers using your preferred cooking method according to the packet’s instructions.
7. Slice open the burger buns and dress with shredded baby gem lettuce, the TiNDLE Burgers and top with a nice covering of coronation sauce.
