This creamy sundried tomato pasta is packed with protein and flavour.  The perfect healthy vegan lunch recipe!

Serves 2

Ingredients

120g pasta
1/2 cup cashews
1 cup pasta water
1 tbsp miso paste
1 garlic clove
Juice of half a lemon
1/4 cup nutritional yeast
1/2 tsp smoked paprika
4 sun-dried tomato halves (plus one more for garnishing)
2 tbsp unflavoured vegan protein powder
1/4 tsp onion powder
1/2 tsp mustard
Black pepper to taste

Method

1. Cook pasta of choice in salted water, drain and save the water it was cooked in.
2. In a blender combine all remaining ingredients (including 1 cup of pasta water) and blend until smooth.
3. Add the sauce and pasta into a saucepan to heat through, add veg of choice (we like peas!) Once hot, serve.
4. Cut up the remaining sun-dried tomato half and garnish on top.
5. Enjoy!
