Creamy Sundried Tomato Pasta (High Protein)

Makes 2-3 servings.


• 1/2 cup cashews
• 1 cup pasta water
• 1 tbsp miso paste
• 1 garlic clove
• Juice of half a lemon
• 1/4 cup nutritional yeast
• 1/2 tsp smoked paprika
• 4 sun-dried tomato halves (plus one more for garnishing)
• 2 tbsp unflavoured Vegan Protein
• 1/4 tsp onion powder
• 1/2 tsp mustard
• Black pepper to taste


1. Cook pasta of choice in salted water, drain and save the water it was cooked in.
2. In a blender combine all remaining ingredients (including 1 cup of pasta water) and blend until smooth.
3. Add the sauce and pasta into a saucepan to heat through, add veg of choice (we like peas!) Once hot, serve.
4. Cut up the remaining sun-dried tomato half and garnish on top.
5. Enjoy!
