Golden Garlic Rice

Vegan golden garlic rice

This rice is tasty as is, but you can also do what you want to make it your own by adding different spices and using different frozen veggies. One of my favorite things to do to dress it up is turn it into fried rice. I let it sit for a day in the refrigerator, then sauté it in some oil with soy sauce, hot sauce, and small cubes of extra-firm tofu. Yum!

Ingredients

  1. 1 ½ tbsp garlic oil
  2. 1 cup long-grain white rice
  3. ¼ small yellow onion, finely chopped
  4. 3 Poached Garlic cloves, chopped
  5. 2 cups vegetable broth
  6. ½ cup frozen mixed veggies
  7. ¼ cup sliced shiitake mushrooms

Method

  • Add the oil, rice, onion, and garlic to a medium sauté pan.
  • Cook over medium heat, stirring frequently, until the onions become translucent and the rice turns a golden brown (about 2 minutes).
  • Add the vegetable broth, frozen vegetables, and mushrooms.
  • Bring to a boil, cover, and lower to a simmer.
  • Allow to simmer for 20 minutes.
