Prep Time: 10M
Cooking Time: 30M
Serves: 1

Who knew cauliflower could be so versatile? This jerk cauliflower makes a great chicken alternative and would work as a side for a BBQ.

You could even wrap it in a tortilla for something more portable and enjoy it as a quick lunch on the go.

There's more where this came from!

Ingredients

  1. Half a head of cauliflower, broken into bite-size florets
  2. 1 – 2 Tbsp Jerk seasoning
  3. 2 Tbsp oil
  4. Spring onions, finely chopped
  5. Vegan mayonnaise
  6. Chives to serve

Method

  • Put the florets in a bowl with the oil and then Spread out on a baking tray and put in an oven at 180c for 20 mins. They should soften and brown slightly.
  • Carefully transfer the cauliflower to a bowl and add as much jerk seasoning as it takes to give your cauliflower a good coating.
  • Put the cauliflower back on the baking tray and give it another 10 mins in the oven. I like my cauliflower quite well cooked and soft all the way through. Some people prefer cauliflower with more bite, in which case reduce your cooking times accordingly.
  • Once nicely soft and browned, transfer to serving dish, top with Spring onions and a drizzle of vegan mayo and you’re done.
