Ingredients

  • 10g desiccated coconut
  • 30g sprouted oats
  • 25g mixed seeds
  • 2 tbsp ground flaxseed
  • 100ml Plenish almond m*lk
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • Pinch sea salt
  • 250g dried figs

Method

Pre heat oven to 180.

Soak the coconut, oats, seeds, spices and flax with the nut milk and set aside.

Finely chop the figs and process into a paste.

Once the oats have soaked up the milk, briefly combine with the figs in the food processor and press the mixture into a lined baking tray.

Bake for 30 minutes until the edges are light golden brown and allow to cool for about 15 minutes before cutting into bars. These bars are best kept in an airtight container at room temperature.
