Olive oil
1 x large onion
3 cloves garlic
Tamari/soy sauce
1 tsp chopped ginger
A good sprinkle of cayenne pepper or chilli powder
A good handful of frozen edamame beans
1 x pack of stir fry vegetable mix
1/2 packet of kale
1 x pack of marinated tofu

Cook time: 15 minutes
1. Pour some boiling water from the kettle into a pan, put on a low heat and chuck in your edamame beans (these need approx. 5 minutes to cook).
2. Add some olive oil to a pan and put on a medium heat.
3. Chop up your onion and throw in the pan.
4. Chop/mince your garlic and ginger and add to the pan after a minute or two.
5. Add a good shake of cayenne pepper/chilli powder and stir well.
6. Add a generous splash of soy sauce and add the tofu. Mix well.
7. Wash your stir fry veg and add them to the pan along with the shredded kale. Stir well.
8. Your edamame beans should be ready, so drain in a colander and add them to the pan.
9. When your stir fry is hot through, it’s ready.
