180g Happiee! Plant-Based Shrimpiee
1 little gem lettuce
1 ripe avocado
Cayenne pepper
Juice of ½ lemon
Lemon wedges to garnish
For the Cocktail Dressing:
2 tbsp vegan mayonnaise
1 tsp tomato ketchup
1 tsp sriracha

1. First, prepare your Shrimpiee, you can cook them from frozen by steaming or simply add them to boiling water and cook for 5 minutes.
2. To make your Marie Rose sauce, simply mix your favourite vegan mayonnaise with the sriracha and tomato ketchup.
3. To make the salad, finely chop the lettuce and slice the avocado, squeezing the lemon over the top of it to keep it green and gorgeous.
4. Finally, layer sauce, avocado, lettuce and Shrimpiee, top with a dusting of cayenne pepper and a lemon wedge to finish and enjoy!
