Violife Cocospread Pancakes

Ingredients

pack Violife Cocospread  

250 grams self-rising flour 

2 tbsp sugar 

2 tbsp baking powder 

1 tsp salt 

300g coconut milk  

2 tbsp apple cider vinegar 

2 tsp vanilla 

4 tbsp coconut cream  

4 tbsp organic coconut oil  

Strawberries, sliced  

Banana, sliced  

Raspberries  

Method

  1. In a medium bowl, add the flour, sugar, baking powder and salt and stir to combine.
  2. In separate bowl add milk, vinegar and vanilla. Pour liquid mixture into dry and whisk until smooth
  3. Let the batter rest for 10 minutes in the fridge.
  4. Pour about ½ cup (65 grams) of batter onto greased nonstick pan. Cook pancakes until golden on both sides.
  5. In a bowl whisk the Violife Cocospread with the coconut cream until creamy. 
  6. Pour chocolate over the pancakes and garnish with chopped strawberries and blueberries.
