This apple and spring onion salad is a fresh and fruity vegan dish that tastes much more elegant than it sounds.
It’s perfect for a BBQ or as a side dish with a hearty one-pot dish. Serve it with a couple of slices of a rustic baguette as a simple dinner on hot summer evenings.
3 apples (not too sweet)
1 bunch spring onions (6-7)
3/4 cup soya yoghurt (full fat)
1 tsp lemon juice
½ tbsp agave syrup (less if the yoghurt is sweetened)
Salt and pepper
½ cup roasted and salted peanuts

1. Wash the apples, remove the core and cut them lengthwise in fine slices.
2. Drizzle with a little lemon juice and mix in a bowl.
3. Top and tail the spring onions, wash them and cut into very fine slices.
4. Mix apples and onions in a salad bowl.
5. Mix yoghurt with agave syrup, salt and pepper, pour over the apple and onion mix and mix well.
6. Sprinkle with peanuts before serving.
