These adzuki bean burgers are easy, tasty and a bit different!

2 cups cooked and drained adzuki beans
½ grated onion
¼ cup toasted sunflower and pumpkin seeds
1 tbsp tamari or shoyu (natural soya sauce)
1 tbsp dried or fresh sage, coriander or herbs of your choice (leaves only) finely diced
Pinch of sea salt and pepper (optional)
Buckwheat flour
Organic sunflower frying oil
These adzuki bean burgers are easy, tasty and a bit different!

Mash the adzuki beans in a bowl and add the onion, seeds, tamari or shoyu and some fresh or dried sage/herbs of your choice and mix well.
Add enough flour to bind the mixture together, but just enough so it remains slightly sticky.
Form into burger shapes (flour your hands so the mixture does not stick to them).
Heat a heavy-bottomed pan and fry the burgers in a generous amount of hot oil in a frying pan for 3-4 minutes on each side.
Serve with baked pumpkin slices on top and drizzle with a reduced sauce.
