Chickpea Tuna Sandwiches

This creamy vegan tuna sandwich filling has quickly become a plant-based classic!

To make this recipe, there are two stages. Firstly, the vegan tuna needs to be made. Secondly, once this has been done, is the easiest part! All we have to do for this bit is actually assemble the sandwich. The recipe suggests adding lettuce, tomato and avocado but feel free to add or leave ingredients out at this stage – the important bit is making the tuna itself!

Ingredients

Chickpea Tuna:

  1. 1 can chickpeas
  2. ½ cup celery and leaves, chopped
  3. ½ red onion, finely diced
  4. ¼ cup vegan mayo, mashed avocado or hummus
  5. Juice of ½ lemon
  6. ½ tsp garlic powder or minced garlic
  7. 2 tbsp fresh dill, diced – optional
  8. Salt, pepper

Sandwich:

  1. Bread or wrap of your choice
  2. Lettuce
  3. Tomato
  4. Avocado

Method

  • Drain and rinse chickpeas, place in a mixing bowl.
  • Use the back of a fork or a masher to mash chickpeas to desired consistency. We leave ours slightly chunky.
  • Add remaining ingredients and mix well.
  • Add salt and pepper to taste.
  • You are now ready to make your sandwich.
  • Place lettuce onto a slice of bread and scoop a large serving of chickpea tuna on top.
  • Add tomatoes, avocado and any other desired ingredients and top with a second slice of bread.
