- Drain and rinse chickpeas, place in a mixing bowl.
- Use the back of a fork or a masher to mash chickpeas to desired consistency. We leave ours slightly chunky.
- Add remaining ingredients and mix well.
- Add salt and pepper to taste.
- You are now ready to make your sandwich.
- Place lettuce onto a slice of bread and scoop a large serving of chickpea tuna on top.
- Add tomatoes, avocado and any other desired ingredients and top with a second slice of bread.
