Sausage banh mi

1 pack Meatless Farm Meat Free Sausages
1 baguette/individual ciabatta rolls
25g grated carrot
25g grated radish
1 thumb sized piece of ginger, grated
Handful of coriander leaves
Handful of mint leaves
1 courgette, thinly sliced lengthways using a hand peeler
1 red chilli, chopped
1 green chilli, chopped
50 ml rice wine vinegar
2 tbsp sugar
1 tbsp salt
100g mayonnaise
2 tbsp sriracha


  1. First, create your pickling liquid by mixing the rice wine vinegar, sugar and salt. Add in the grated carrot, radish, ginger and leave to pickle for 20 mins (or overnight if you have time).
  2. Remove the Meatless Sausages from their packaging and cook according to pack instructions.
  3. Mix the mayonnaise and sriracha sauce together in a small bowl.
  4. Meanwhile, cut the bread in half and lightly toast it under the grill.
  5. Time to build! Layer up the courgette, pickled veg, sausages, chilli and herbs, then top with a healthy dollop of spicy sauce!
