12 Heura® Meatballs (or your choice of vegan meatballs)
1 red apple
1 lemon, juiced
50 g raisins
25 g pine nuts
Parsley
Chives
2 tsp curry powder
200 ml almond cream
Oil
Salt
Method
Cut the apple into medium-sized cubes, dip them into the lemon juice and set aside.
Place the raisins into a bowl of water to hydrate.
Wash and chop the parsley and chives. Set aside.
In a frying pan, brown the meatballs with a splash of oil. Once golden, remove from pan and set aside.
In the same pan, fry the apple cubes and pine nuts until lightly browned. Add the raisins and their water and cook on high heat for 2 minutes.
Add the meatballs and season with curry powder. Stir to mix and add the almond cream and salt. Simmer for 2-3 minutes. Garnish with the chopped parsley and chives.
