Aubergine Recipe

Ingredients

  1. 1 Aubergine
  2. ½ Lt of coconut milk
  3. 1 White onion
  4. 2 Cloves Garlic
  5. 5g Cumin Powder
  6. 5g Onion Powder
  7. 5g Turmeric Powder
  8. 5g Smoked Paprika
  9. 1g Garlic Powder
  10. 2g Apricots
  11. 10g Cinnamon Sticks
  12. 15g Fresh Coriander

Preparation

  1. Halve and score the aubergines. Oil and grill until charred.
  2. Mix all the spices with 200 gm of water to make a paste.
  3. Fry the onions and garlic in oil until golden.
  4. Add the spice paste and fry for a minute longer.
  5. Add the coconut milk and apricots, and the cinnamon sticks.
  6. Add the fresh coriander and then the grilled aubergines face up.
  7. Bake in the oven at 180C, for 30 mins until tender. Let cool and check seasoning.
